Creamy Salad Dressing

This dressing is a salad. It’s creamy, sugar-free, and taste full.  Made with healthy ingredients on hand sure to delight even your pickiest eater. It looks simply elegant when served but it takes just a few minutes in the blender to prepare. Go ahead, drown your salad; it’s all good for you!


  • 3/4 c olive oil
  • 1/4 c red wine vinegar
  • 1 T dry basil
  • 1 T dry tarragon
  • 3 garlic cloves
  • 1/2 t salt
  • 1/2 t peppercorns (may substitute ground pepper)
  • a few leaves of lettuce (any kind works!)
  • 3 T red onion
  • 1/2 of a medium avocado
  • 2 whole cored tomatoes
  • 2 1/2 – 3 oz feta cheese (1/3 of a square block)
  • 1 carrot, top removed


  • Add everything to a blender or Vitamix.
  • Pulverize until smooth.
  • Enjoy!
