This dressing is a salad. It’s creamy, sugar-free, and taste full. Made with healthy ingredients on hand sure to delight even your pickiest eater. It looks simply elegant when served but it takes just a few minutes in the blender to prepare. Go ahead, drown your salad; it’s all good for you!
- 3/4 c olive oil
- 1/4 c red wine vinegar
- 1 T dry basil
- 1 T dry tarragon
- 3 garlic cloves
- 1/2 t salt
- 1/2 t peppercorns (may substitute ground pepper)
- a few leaves of lettuce (any kind works!)
- 3 T red onion
- 1/2 of a medium avocado
- 2 whole cored tomatoes
- 2 1/2 – 3 oz feta cheese (1/3 of a square block)
- 1 carrot, top removed
- Add everything to a blender or Vitamix.
- Pulverize until smooth.
